If you are running managing projects, there is one book you should know by heart and that is the PMBOK or Project Management Book of Knowledge.
The PMBOK describes in detail what project management is all about, in short it is all about managing processes. By completing a number of processes in a timely manner you will complete your project in a timely manner.
In ISO 9000 the focus is also on processes, but ISO 9000 is not dealing with projects. It is a standard for normal day-to-day working procedures. Still the focus on working processes shows the importance of keeping track of them .
In a normal working environment, you can monitor and correct the working processes by regularly auditing them and correcting them. New staff replacing old staff may need some time before the working process is operating properly again.
Training may be necessary to get up to the old level of working quality.

In a project, you normally get one shot at it. It is the nature of a project to perform a process once or maybe a few times, hardly enough to audit and correct in an ongoing project, unless of course it is one of the supporting processes, like drawing approval, which are repeated again and again as the project moves along.
The people involved in your projects will have all levels of experience, ranging from beginner to experienced; this is just the nature of things.
This means that the more you can enforce the working processes, the less inexperienced personnel can cause problems for you with wrong working processes.
To manage the processes and make sure that everyone follows your procedures you need a tool that can make this happen.
